Why is the 737 so much popular amongst cockpit builders than the 747? Is it because the parts are easier to obtain or something? Is building it easier maybe?

Well,

That will be hard to say cause neither the 747 nor the 737 is appealing to me LOL! But the 737 has more fans than Iron Maiden man and also you have mostly all the software for it... Plus is the most popular Boeing Piece of S$%&
(I´m kidding)... And you have shells for it, is fairly easy to find a real plane shell and real parts etc... As well as panels everybody makes them... So there are a lot of resources for it I mean Project Magenta has developed a complete Software Suit for it so it is fairly easy for builders to make that plane. Still don´t know why everybody isn´t making a 767 Pit CAN´T UNDERSTAND IT ;)

Hope it helps.

IMHO, it's the emergence of the glass cockpit, which the NG has, as well perhaps, the familiarity and availability. Possibly there are more opportunities to access the 737 than any other aircraft, because of this "we" have more access to dimensions, aircraft, pilots, maintnenance persons etc.

I like the big AC but.... The 737 can land in more airports, and is used more for short hauls. And the 737 is one of the last planes the pilot turns things on and off, not automatic. My 2cents.

Yeah I know there's alot of stuff that you can get for a 737. I thought about getting the PMDG 737NG just to see what it was like flying that one.
