connection of existing pots to analoge connectors

hi guys,well phidgets is the choice after lots of thinking ect,thanks to coconut airlines for the programme to make assignments easier for us computer thickies(lol)my 737 flight deck already has the pots connected to the controls and terminating in the three wires how do i connect these to the analogue connectors?(i assume i can either get cable to do this or hack in to some new ones,
