After learning about a great piece of avionics software called PSX, I am very tempted to build a 747 cockpit. How far would I get with £15,000? Looking at maybe a FDS DSTD and pedestal?

If you have genuinely got £15k to spend and you are absolutely commited to flying 747s and know the systems inside out, then the FDS 747 is probably your best bet. Remember that you will need to pay customs fees, taxes and duty on top when importing from FDS in Canada. Take into consideration space, building time, the learning curve and any further costs before making a decision. Also if you want to buy a cockpit, buy it all in one hit, dont buy bits here and there as it will cost you more in the long run and could lose you money and devalue your pit. Think about this seriously and make a decision because £15k is a lot of money to commit to a hobby. For £15k you could fly a Cessna for 150 hours in comparison. Good luck with your project.

Thanks for the advice. Unfortunately I will not be able to pass the medical to fly a Cessna.
