I'm trying to extend this joystick. My plan is to cut these wires and insert/attach longer wires so I can have a longer shaft (keep it G rated guys). I've read other forums that have mentioned using Ethernet Cable. What do you guys think? What kind of wires would work and where would I fine them. I'm in the US (if it matters).

Just use equipment wire. You could also use ribbon cable or the cable used in servo extensions.

When I extended my yoke, I cut the wires and then ran them into cat5 jacks. cat 5 jack (http://i885.photobucket.com/albums/ac52/akmongo/3e229b54.jpg) Then a simple cat 5 cable makes any length extension you want, without worrying about splicing together all those tiny wires. It is also neat and tidy, and removable to lengthen or shorten if your future needs change.

That's a great idea. I'm no electrical expert, but what if there are too many/less wires than there are connections on the cat 5 connector? Perhaps this is a dumb question.

When you cut the wires, if they are not color coded, tag them with numbers. The terminals are numbered too. Match the wires to the same numbered terminal in both jacks. The only thing to be careful of is that you have as many or more terminals as joystick wires.

The store where I bought them let me look at them to be sure they would work. They also loaned a punch down tool, which made it very easy to attach the wires to the terminals. Easy stuff, even for a novice like me.
