Control setup ideas for helicopter cockpit

Hi all
I am looking for ideas on connecting potentiometers to controls on my helicopter simpit.

I intent to use leo Bodnars Universal Joystick Controller BU0836X.

There are two rods that move horizontally that control the cyclic.
Two rods under the cockpit floor in a horizontal position for the pedals and one rod in a vertical position that controls the collective.

I need some advice on what methods would work and what types of potentiometers I should be looking for
