    What is the difference between an aircraft configuration file and an aircraft txt file?

    Well, the most simple answer is: the extension (aircraft.txt or aircraft.cfg) Both are text files with the characteristics of the aircraft. If you change .cfg into .txt you get the same fle but FS will not recognize it anymore. But when you use Project Magenta you use .txt files in your FMS controlling the variabeles like Ref speeds, V1, V2 Vr, etc.
