I understand that 1024X768 is the standard for a good image.
When I see an add reading:

800 x 600 Native resolution; compatible with XGA resolution of 1024 x 768

What does that mean really?

1024X768 was the standard (native) of most units. Now the standard (native) has increased to the next level 1280X960, this seems more the direction of new projectors.

The misconception is just because you have a good resolution it does not necessarily mean you'll have a clear and detailed image. The pixelation is the key..... number of pixels over a certain area. The larger the image the greater loss of clarity and detail, except for the detail of a pixel.

And, although you may have a native resolution of 1024X768 and an XGA of 1280X960 does not decrease the size of the pixels and increase clarity.

Hopefully some helpful tid-bits, I'm sure there are lot's of more comments to come regarding this

It means that the hardware resolution of the projector is 800x600.

However, it does take a 1024x768 signal. However, what it will be projecting is your 1024x768 image with 800x600 pixels.

I'd stay away from a 800x600 native resolution projector. A relic from the past. Good for movies, but i would advise a better one for a sim.

Like Matt said, 1024x768 was/is a mainstream standard now, but is rapidly becoming substandard with more and more widescreen high res and even HD projectors coming available.
