What Interface do you suggest?

I am really having a hard time trying to figure out what hardware to use as my interface between my cockpit and pc. I am using gauges driven by servos, analog voltages, and perhaps a stepper motor(not sure about that yet). I have looked at the EPIC and Simkits CCU systems. I am trying to stay cost effective( aren't we all!) but am will ing to spend whatever I need to get reliable results. What do you guys/gals suggest? Why?
Also, I am very comfortable working with electronics and have a solid understanding with discreet components. I'm not very current Digital stuff but I do know how it all works. I am thinking perhaps I should just buy Mikes book, building recreational flight sims and use that. My understanding is that usiing those ideas are the best way cost wise.
