What is right normal procedure for one Engine Taxi before take-off and after landing?
How many fuel it's economy if I taxi with one engine but use APU?

Each airline has its own rules for taxing procedures with engines shutdown for fuel consumption. Some do it.....most dont. Not sure why you would want to do it in the sim though. Fuel is free :-)

Some airlines mandate shutting down #2 for taxi after landing the 727. Or at least they used to.

Is the APU must be running first before engine shutdown?

Not on the 727. Generator #3 is supplying essential power. It's recommended that the APU be started five minutes prior to gate arrival.

Sorry to say the aswer is not there... The Procedure is there which is different but not how much fuel you save and if it is not policy it is not neccessary to do it!

You will find company policy rules. And procedures are very company specific....
